π Old Virginia-Style Barbecue Pork
A classic, vinegar-forward Virginia barbecue β simple, tangy, and steeped in history.
Ingredients:
- 8 lb pork butt (Boston shoulder)
- β cup apple cider vinegar
- 2 pats (about 2 Tbsp each) softened butter
- Β½ tsp salt
- 1 tsp coarsely ground black pepper
- Pinch of red pepper flakes
- (Optional) More vinegar or spices to taste
Instructions:
- Mix the seasoning: Combine vinegar, butter, salt, black pepper, and red pepper flakes.
- Prepare the pork: Rub mixture over the pork butt.
- Smoke or cook: Place in smoker at 275β300Β°F over hickory or oak for about 3 hours.
- Wrap & continue: Wrap in foil and cook 3β4 more hours until pull-tender.
- Rest: Let sit 1 hour before shredding.
- Serve: Pull or chop the meat and serve with Virginia Red Sauce.
π Virginia Red Barbecue Sauce
A traditional sauce β tangy, a touch sweet, and perfect on pulled pork.
Ingredients:
- 2 cups apple cider vinegar
- 1 cup ketchup
- 1 cup light brown sugar
- Β½ cup water
- 2 Tbsp yellow mustard
- 1Β½ Tbsp kosher salt
- 1 Tbsp lemon juice
- 1 Tbsp paprika
- Β½ tsp cumin
- Β½ tsp garlic powder
- Dash of cayenne (to taste)
Instructions:
- Combine: Add all ingredients to a saucepan.
- Simmer: Bring to a gentle simmer over medium heat for 10β15 minutes.
- Cool & serve: Remove from heat, cool, then serve with pulled pork or ribs.
- Store: Refrigerate for up to 2 weeks.
π Shenandoah Valley-Style Barbecue Chicken
Bright and tangy β this vinegar-based sauce gives grilled chicken a Virginia countryside flavor.
Sauce Ingredients:
- 2 cups apple cider vinegar
- ΒΌ cup neutral oil (vegetable or peanut)
- 1 Tbsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 2 tsp poultry seasoning
- Juice of 1 lemon
Directions:
- Mix sauce: Stir all ingredients together in a bowl.
- Prep chicken: Slather sauce over chicken pieces.
- Cook: Grill or smoke slowly, reapplying sauce occasionally.
- Rest: Let sit 30 minutes before serving.
