π₯ Corned Beef Hash
A Virginia hunting and soldier campfire classic β hearty, filling, and cooked in one skillet.
Ingredients:
- 1 can corned beef (or 12 oz fresh chopped)
- 3 medium potatoes, diced
- Β½ onion, chopped
- 2 Tbsp butter or bacon grease
- Salt, black pepper, smoked paprika to taste
- Optional: 2 fried eggs per serving
Instructions:
- Heat cast-iron skillet over campfire coals.
- Melt butter or bacon grease; cook diced potatoes 10β12 minutes until browned and soft.
- Add onion, cook until translucent.
- Stir in corned beef, mix evenly, press down slightly and crisp bottom for a few minutes.
- Top with fried eggs if desired and serve hot.
π Cast-Iron Trout (Blue Ridge Style)
Fresh trout from Virginia streams, cooked simply over an open fire for true mountain flavor.
Ingredients:
- 2 whole trout, cleaned and scaled
- 2 Tbsp butter
- 1 lemon, sliced
- Salt, pepper, garlic powder
- Fresh herbs (parsley, thyme, ramps if available)
Instructions:
- Heat skillet or prepare foil packet over campfire.
- Melt butter, place trout inside, season with salt, pepper, garlic powder, and herbs.
- Add lemon slices inside each fish.
- Cook 4β5 minutes per side, until fish flakes easily.
π¦ Venison Skillet (Hunterβs Hash)
A Virginia hunting camp favorite β hearty venison with potatoes and vegetables cooked in one pan.
Ingredients:
- 1 lb ground or chopped venison
- 2 medium potatoes, cubed
- Β½ onion, chopped
- Β½ bell pepper (optional)
- 2 Tbsp bacon grease or oil
- Salt, pepper, chili flakes
- Optional: splash of Worcestershire or hot sauce
Instructions:
- Heat oil in cast-iron skillet over coals.
- Add potatoes, cook 10 minutes until lightly browned.
- Stir in onion and pepper; cook until soft.
- Add venison, cook until browned.
- Season with salt, pepper, chili flakes; add Worcestershire or hot sauce before serving.
